Ingredients

Instructions

  1. Heat the sesame oil in a skillet over medium heat, then cook the garlic and ginger for about a minute.
  2. Add the tamari, rice vinegar and maple syrup and bring to a boil.
  3. Stir the cornstarch into the cold water, add this slurry to the pan and boil until thickened. Take off the heat.
  4. Preheat the oven to 425°F (220°C) and line a baking sheet or dish with parchment.
  5. In a large bowl, whisk the dry batter ingredients: rice flour, tapioca or corn starch, garlic powder, salt, black pepper and cayenne.
  6. Add the wet batter ingredients (water and sesame oil) and mix until smooth.
  7. Add the cauliflower and toss to coat quickly, since the batter thickens as it sits.
  8. Spread on the lined sheet and bake for 30 minutes.
  9. Brush the sauce over the florets and bake 10 to 15 more minutes, or toss the florets in the sauce and serve, or bake them again in the sauce for 10 to 15 minutes, depending on how crisp and sticky you want them.
  10. Top with black and white sesame seeds and chopped scallions.
