Ingredients

Instructions

  1. Preheat the oven to 180°C (350°F) and grease an 8-inch baking dish.
  2. Chop the pitted dates and put them in a bowl with the baking soda. Pour the boiling water over them and let them soak for about 10 minutes to soften.
  3. In a mixing bowl, beat the butter and brown sugar until fluffy, about 2 minutes.
  4. Add the eggs and vanilla extract and beat until combined.
  5. Sift in the flour, baking powder and salt, and fold gently into the wet ingredients. Add the soaked dates with any remaining soaking liquid and mix until combined.
  6. Pour the batter into the greased dish and spread evenly. Bake for 25 to 30 minutes, until a toothpick inserted in the centre comes out clean.
  7. While the pudding bakes, put the sauce ingredients except the vanilla extract in a saucepan. Melt over medium heat, stirring occasionally, then simmer for 2 to 3 minutes until smooth and slightly thickened.
  8. Take the sauce off the heat, add the vanilla extract and stir once more.
  9. Pierce the warm pudding all over, then spread about half the warm sauce over it, right to the edges, so the sponge is fully covered.
  10. Serve with any remaining sauce drizzled on top.
