Ingredients

Instructions

  1. Slice the pork into thin strips. Soak them in a light salt solution (1 tsp salt in 3 cups water) for 10 minutes, rinse with clean water, and squeeze out the excess water.
  2. Mix the pork with 1 tbsp soy sauce, 1 tbsp Chinese cooking wine, 1 tsp five-spice powder, 1/8 tsp salt, 1/4 tsp baking soda, 1 tsp cornstarch and 1/2 tsp dark soy sauce. Let it sit for 15 minutes.
  3. Meanwhile, cut 1/4 of an onion into thin strips and cut the green chilies into bite-size pieces, removing the seeds.
  4. Heat the wok until smoking hot, add 3 tbsp oil and heat until it smokes. Add the pork, spread it out so most of it touches the wok, and cook 15 seconds. Toss and sear the other side. Keep going for 2 to 3 minutes until cooked through.
  5. Turn off the heat, tilt the wok and pour off the grease, leaving the oil in the wok. Remove the pork.
  6. Over low heat, add 2 tsp Sichuan peppercorns and let them flavor the oil until they darken, then remove them.
  7. Add the crushed garlic, ginger slices and red dried chilies and stir until fragrant.
  8. Add the green chilies and stir over medium-low heat for 1 minute. Add 1/2 tsp salt, then add the onion and keep stirring until the vegetables reach your preferred doneness.
  9. Return the pork to the wok, mix everything well, and serve.
