- Mozzarella cheese¼ cups
- Basil½ tsp
- Bagel½
- Scallion
- Vegan cream cheese2 tbsp
- Oil2 tsp
- Mustard seed½ tsp
- Chili pepper½
- Curry8–10
Instructions
- Wash the moong dal well: rub it in water, drain and repeat until the water runs clear. Soak it in at least twice its volume of water for at least 4 hours, or overnight.
- Drain the dal and blend it with the base batter ingredients for 1 minute, let it rest to hydrate, then blend again for 1 to 2 minutes. Rest it briefly so the baking powder does not activate early, and repeat until very smooth. You can stir in the baking powder after blending instead.
- Preheat the oven to 350°F (177°C) and line a muffin tin or grease it well.
- For the pizza muffins: mix the batter with the pizza filling (tomato, mushroom, olives, bell pepper, onion, vegan mozzarella, basil, oregano and red pepper flakes) until well combined, scoop into the muffin tin and bake 22 to 26 minutes.
- For the bagel muffins: mix the chopped bagel or bread with the green onion and any other vegetables, then add the batter and mix well. Gently fold in scoops of vegan cream cheese so pockets remain, add everything bagel seasoning if using bread, scoop into the tin and bake 22 to 26 minutes.
- For the Indian-spiced muffins: heat the oil in a small skillet over medium heat, add the mustard seeds and wait until they pop, then turn off the heat and stir in the green chili and curry leaves. Mix the bell pepper, green onion and batter, lightly stir in the spiced oil, scoop into the tin and bake 22 to 26 minutes.
