- Chicken breast · boneless skinless2.2 lb
- Garlic8 cloves
- Ginger · grated1 tbsp
- Scallion4
- Carrot½
- Broccoli14 oz
- Salt
- Vegetable oil5 tbsp
- Toasted sesame oil2 tsp
- Sesame seed · toasted
- Soy sauce3 tbsp
- Oyster sauce4 tbsp
- Dark soy sauce1 tsp
- Sugar2 tbsp
- Chicken stock · powder2 tsp
- Shaoxing wine3 tbsp
- Cornstarch3 ½ tbsp
- White pepper½ tsp
- Baking soda1 tsp
Instructions
- Wash the rice several times until the water runs clear, then cook it in a rice cooker with the same amount of water as rice.
- While the rice cooks, combine all the sauce ingredients in a small container and mix well.
- Cut the chicken into bite-sized pieces, put them in a bowl with the marinade ingredients, massage well, and refrigerate for at least 15 minutes.
- Finely chop the garlic, grate 1 tbsp ginger, thinly slice the green onions (keep some for garnish) and the carrot (or use a red chili). Cut the broccoli into bite-sized florets, about 400 g.
- Blanch the broccoli in boiling salted water for 1 minute, then shock in ice water and drain well.
- Heat 2 tbsp oil in a wok over high heat. Sear the marinated chicken, in batches if needed, for 2 to 3 minutes, flip and cook 3 to 4 minutes more until cooked through. Remove and set aside.
- In the same wok, add 2 tbsp oil over medium heat. Add the garlic, ginger and white parts of the green onions and fry for 1 minute until fragrant.
- Raise the heat to high, add the broccoli and carrot and stir-fry for 1 minute. Return the chicken and stir for 1 minute.
- Stir the sauce, add it to the wok and cook 2 to 3 minutes until thickened. Turn off the heat, then stir in the sesame oil and sesame seeds.
- Divide the rice into microwave-safe containers, add the chicken and broccoli evenly, and garnish with the reserved green onions.
