Instructions

  1. Make the spicy guacamole first and refrigerate it: coarsely mash the avocado in a bowl with a fork, then stir in 3 tablespoons finely diced onion.
  2. In a small bowl, mix 1 tablespoon mayonnaise with 1/2 teaspoon TABASCO sauce, add to the guacamole and season with 1/4 teaspoon salt or to taste. Cover and refrigerate.
  3. Make the sausage patties: in a bowl, mix 1/2 pound ground pork, 1 pressed garlic clove, 1/2 teaspoon TABASCO sauce and 1/2 teaspoon salt with your hands until just blended.
  4. Divide into 2 patties about 1/4 inch thick.
  5. Heat a non-stick pan such as cast iron over medium-high heat. Butter the cut sides of the buns and toast the buttered sides until golden, then set on plates.
  6. In the same pan, cook the patties undisturbed for 2 minutes, flip, top each with 2 slices of cheese and cook 2 more minutes. Remove from heat and cover to keep warm.
  7. Over medium heat, melt a dab of butter in a non-stick pan. Add 2 beaten eggs, stir at first, then let set until nearly firm. Fold in half and in half again.
  8. Layer a cheesy patty on the bottom bun, top with a folded egg and spread with guacamole, then cover with the top bun. Repeat with the remaining patty and eggs for the second sandwich.
