1. Make the coffee mixture: in a bowl, beat the instant coffee, caster sugar and hot water on medium speed for 5-6 minutes, until fluffy. Set aside.
2. Make the strawberry cloud: in another bowl, beat the whipping cream on high speed for 5-6 minutes, until fluffy.
3. Add the strawberry syrup to the cream and mix until well combined.
4. To assemble, put the strawberry jam, coffee mixture, ice cubes and milk into a serving glass, then pipe the strawberry cloud on top and serve.
