1. Grind some of the strawberries and all the red apples together to a smooth paste.
2. Transfer the paste to a pan and add the remaining strawberries and the caster sugar.
3. Add the lemon juice and cook on high heat for 4-5 minutes.
4. Mash the strawberries with a potato masher.
5. Cook on high heat, stirring continuously, for 15 minutes or until it reaches 105°C or 108°C.
6. Skim off the foam and turn off the heat.
7. Let it cool to room temperature, then transfer to a sterilised jar.
