Strawberry Mochi Milk (Nana's Green Tea Copycat Recipe)
Ingredients
- Rice flour1 tbsp
- Potato starch¼ tsp
- Strawberry3 tbsp + 80 g
- Adzuki bean1 tbsp
- Milk150 ml
- Condensed milk1 ½ tsp
- Sugar2 tsp
- Lemon½ tsp
- Whipped cream
Instructions
- Cut the stems off 80 g of strawberries, chop them small and put them in a pan with 2 tsp granulated sugar and ½ tsp lemon juice.
- Cook over medium heat, stirring, and once they soften, mash them with a fork to your preferred consistency.
- When the sauce has thickened slightly, transfer it to a heatproof bowl and let it cool.
- Bring a pot of water to a rolling boil.
- In a bowl, combine 1 tbsp glutinous rice flour and ¼ tsp potato starch (omit the starch if using shiratamako). Add ½ tsp water at a time, mixing well after each addition, until a stable ball forms. Knead until soft like an earlobe; about 1½ tsp water is usually enough, but you may need more or less.
- Roll the dough into a log about 1 cm thick and cut it into 1 cm pieces. Prepare a bowl of ice-cold water.
- Roll the pieces into balls and drop 5-6 at a time into the boiling water, gently stirring with a chopstick or spoon so they don't stick to the bottom.
- Once they float, cook for 30 seconds.
- Scoop them out with a mesh spoon into the ice-cold water and cool for a few minutes.
- In a serving glass, add 3 tbsp strawberry sauce. Drain the mochi, shake off excess water, and add to the sauce, mixing well (keep a few aside for topping if you like). Top with 1 tbsp boiled adzuki beans and ice cubes if you like.
- Mix 150 ml milk with 1½ tsp condensed milk if using, and pour it into the glass.
- Decorate with whipped cream, strawberries, adzuki beans and leftover mochi if you like. Mix well before drinking.
