- Orange1 tsp
- Butter · melted½ cups

- Milk1 cup
- Extra virgin olive oil¼ cups
- Vanilla1 tsp

Instructions
- Preheat the oven to 180°C (350°F). Grease an 8-inch round cake pan with cooking spray and line the bottom with a fitted round of parchment.
- In a large bowl, stir together the flour, cornmeal, baking powder, cinnamon and salt. In a small bowl, rub the orange zest into the cane sugar with your fingers, then whisk the sugar into the flour mixture.
- Set aside ½ tablespoon of the melted butter for the pan. In a medium bowl, whisk the eggs, milk, olive oil, vanilla and the remaining melted butter until smooth. Add to the dry ingredients and stir just until combined.
- Brush the parchment in the pan with the reserved ½ tablespoon of butter and sprinkle with the brown sugar. Arrange the sliced strawberries over the bottom to cover it fully.
- Pour the batter over the strawberries. Bake for 45–50 minutes, until a skewer inserted in the centre comes out clean.
- Cool the pan on a wire rack for 15 minutes, then invert the cake onto a serving plate and remove the parchment. Let it cool for 10 more minutes before serving.
- Dust with powdered sugar and top with fresh strawberries if you like. Serve warm or at room temperature.
