Strawberry White Chocolate Cookies
Ingredients
- Butter · softened½ cups
- Brown sugar½ cups
- Sugar¼ cups
- Egg1
- Vanilla1 tsp
- Flour1 ¼ cups
- Baking soda¾ tsp
- Salt½ tsp
- Strawberry · dried½–¾ cups
- Chocolate chip½ cups
Instructions
- Preheat the oven to 350°F (175°C).
- Cream the butter with both sugars using a stand mixer or hand mixer until creamy.
- Beat in the egg and vanilla until just combined.
- Add the flour, baking soda and salt and mix until just combined.
- Fold in the white chocolate chips. Gently crush the freeze-dried strawberries by hand into small chunks, not powder, and fold them into the dough.
- Roll the dough into 9-12 balls and bake on a parchment-lined tray for 9-11 minutes, depending on size, in two batches if needed. They are done when they have puffed slightly at 9-10 minutes.
- Let the cookies sit for a few minutes so they sink back down and firm up.
