Striped Fudge Cookie Sandwiches
Ingredients
- Flour2
- Baking powder½ tsp
- Salt¼ tsp
- Butter · softened¾ cups
- Sugar¾ cups
- Egg1
- Vanilla2 tsp
- Chocolate · coarsely chopped6 oz
- Heavy cream3 tbsp
- Coconut oil · melted
Instructions
- Whisk the flour, baking powder and salt together in a bowl.
- Beat the butter and sugar on high speed until smooth and creamy, about 2 minutes. Add the egg and vanilla and beat about 1 minute more. Scrape down the bowl and beat again as needed.
- Mix the dry ingredients into the wet on low speed. If the dough is too soft and sticky to roll, add 1 more tablespoon of flour.
- Divide the dough into 2 equal parts. Roll each between lightly floured parchment or a floured silicone mat to about 1/4 inch thick, using more flour if sticky. Shapes can vary as long as the thickness is even.
- Dust one rolled slab with flour and cover it with parchment, then place the second slab on top. Cover and refrigerate for at least 1–2 hours and up to 2 days.
- Once chilled, preheat the oven to 350°F (180°C) and line 2–3 large baking sheets with parchment or silicone mats.
- Cut one slab into 2-inch rounds, rerolling scraps, until all the dough is used. Repeat with the second slab; you should have about 64 circles.
- Cut a 1-inch hole in the centre of 32 of the circles to make the donut cookies. Put the whole circles and donut cookies on separate sheets, 2 inches apart.
- Bake the whole circles about 10 minutes, until lightly browned at the edges, and the donut cookies about 9 minutes, rotating the sheets halfway through. Cool on the sheets 5 minutes, then move to a wire rack to cool completely.
- Put 3 oz of the chopped chocolate in a small heatproof bowl. Heat the cream in a small saucepan over medium heat until it just boils, then pour it over the chocolate. Stir gently until smooth, then cool 10 minutes until it thickens.
- Spread about 1/2 teaspoon of ganache on each whole circle, top with a donut cookie and press gently.
- Melt the remaining chocolate in a double boiler or microwave in 15-second bursts, stirring until smooth. If too thick to drizzle, add a splash of vegetable oil or melted coconut oil. Drizzle over the sandwiches and let set about 30 minutes.
