- Ground pork7 oz
- Salt¼ tsp
- Panko¼ cups
- Egg1
- Dashi2 cups
- Soy sauce1 tbsp
- Sake1 tbsp

- Cut the green onion very thinly, and slice the ginger thinly.
- Chop the cut-off cabbage and the brown onion finely. Mix in a bowl with the pork, panko, egg and 1/4 teaspoon salt. Mix very well, then divide and shape into 8 oblong balls.
- Wrap each ball in a cabbage leaf, tucking the end under. Place them in a pot that holds all 8.
- Pour in 2 cups dashi and heat over medium heat. Cover with parchment paper and cook for 10 minutes.
- Add 1 tablespoon soy sauce, 1 tablespoon sake, 1/2 tablespoon mirin and the sliced ginger. Cook 10 more minutes, spooning the broth over the cabbage from time to time.
- Season with salt to taste and serve topped with the sliced green onion.
