Ingredients

Instructions

  1. Peel the carrot, cut it in half lengthwise and slice into thin half-rounds. Peel the daikon, cut into quarters and slice thinly. Thinly slice the gobo diagonally, then soak it in water for 5 minutes. Cut the white part of the long onion into 1/2-inch (1.2 cm) pieces and cut the chicken into small pieces.
  2. Bring the dashi to a boil in a medium pot, add the chicken and all the vegetables except the green part of the onion. Cook over medium heat until the vegetables are tender, about 5 minutes.
  3. Season the soup with 1 tablespoon soy sauce, 1 tablespoon sake and 1/2 teaspoon salt.
  4. In a medium bowl, whisk all the dumpling ingredients together well.
  5. Drop spoonfuls of the dumpling batter into the soup, cover and cook for 5 minutes.
  6. Add the green onion parts at the end, stir, and serve immediately.
