Instructions

  1. Thaw the puff pastry at room temperature for at least 45 minutes. It should be just defrosted, not soft or warm; if it gets too warm, chill it in the fridge for about 1 hour.
  2. Make the apple filling first so it can cool. Finely dice the peeled apples and put them in a small saucepan with the brown sugar, cinnamon, nutmeg, salt and water, and stir.
  3. Cook the apples over medium heat for 18 to 22 minutes, covered for the first 10 minutes, then uncovered until tender and the liquid has evaporated. Refrigerate to cool.
  4. Beat the softened cream cheese in a medium bowl for a few minutes until creamy and smooth. Add the powdered sugar, vanilla and salt, and beat again until smooth.
  5. Line two large baking sheets with parchment or silicone mats. Preheat the oven to 350°F (175°C).
  6. Roll one sheet of puff pastry into a slightly larger, thinner rectangle. Spread the cream cheese filling to the edges, then top with the cooled apple filling, spreading it evenly to the edges.
  7. Roll the second sheet to the same size and lay it over the first, pressing the edges together to seal.
  8. Score and cut the dough into 1-inch-wide vertical strips. If the strips stick to the surface, slide a bench scraper or spatula under each one.
  9. Gently stretch each strip until it is almost twice its length, twist it from both ends, then coil it into a bun and tuck the tail underneath. Place the pastries on the prepared sheet.
  10. Beat the egg with the water and brush the pastries generously with the mixture.
  11. Bake at 350°F (175°C) for 23 to 25 minutes, until the tops just turn golden. Cover with a large sheet of foil and bake for 25 more minutes, until deep golden brown and cooked through. Bake one sheet at a time on the middle rack.
  12. Cool on the baking sheet for about 10 minutes, then move to a wire rack to cool completely. Store leftovers in a sealed container or bag at room temperature.
