Ingredients

Instructions

  1. Keep the frijoles de la olla warm.
  2. Remove the husks from the tomatillos and rinse them briefly under cold water.
  3. Spread the tomatillos, onion, garlic and peppers in one layer on a parchment-lined sheet tray. Drizzle with the olive oil and season with salt.
  4. Roast on the top third rack of the oven at 425°F for 20 to 25 minutes, until lightly browned and the tomatillos and peppers turn a muted green.
  5. Let them rest for 10 minutes.
  6. Blend the roasted vegetables with the cilantro at medium speed until smooth, using a lidded blender with the lid's centre cap replaced by a towel. Season with salt and set aside.
  7. In a large pot over low to medium heat, cook the bacon until crisp and most of its fat has rendered. Set the bacon aside.
  8. Add the spring onions to the rendered fat, season lightly with salt and sauté over low to medium heat for 5 to 7 minutes, until light brown. Set aside with the bacon.
  9. Add the beef, season generously with salt and cook over low to medium heat until it releases its juices.
  10. Scrape up the browned bits from the bottom of the pot. Turn the heat to high and cook for 4 to 6 minutes, stirring constantly, until the meat browns.
  11. Add the salsa verde, chicken stock, two-thirds of the crisp bacon, the seared spring onions, salt and the optional ground cumin. Bring to a boil.
  12. Cover, reduce to low heat and cook for 20 to 25 minutes, until the meat is tender.
  13. Serve in bowls with frijoles de la olla and the remaining bacon and optional garnishes.
