- Beef stock1
- Thyme · dried2 tsp
- Oil¼ cups
- Tomato3–4 + 300 g
- Bell pepper2
- Red onion½
- Tomato paste6 oz
- Reduced pepper mix¾–1 cup
- Suya spice6 tbsp
- Stock cube · crushed½ tsp
- Bay leaf1
- Chicken stock1 cup
- Rice3 cups
- Cabbage · finely shredded
- Beef broth · crushed½ tsp
Instructions
- Make the beef stock: put the beef, salt, onion, curry powder, bouillon, thyme and water in a pot. Bring to a boil, then cook 15 to 20 minutes, until tender, adding a little water if needed.
- Remove the beef and keep the stock. Pat the beef dry, then fry or air-fry until browned.
- Rinse the tomatoes, bell peppers and onion, chop them, and blend with a little water until smooth. Pour into a pot and cook about 30 minutes, until most of the water has evaporated.
- Alternatively, roast the tomatoes, bell peppers and onion on a baking tray with a little oil under the broiler until softened and lightly charred, then blend until smooth.
- Heat the oil in a large pot. Fry the chopped onion for a few minutes until soft. Add the tomato paste and fry about 15 minutes, stirring often, until deeper red.
- Add the reduced tomato and pepper mixture and stir well. Add the suya spice, salt, bouillon, dried thyme, bay leaf and curry powder, and mix well.
- Pour in the beef stock and some water, mix, cover and cook about 5 minutes.
- Rinse the rice repeatedly under running water until clear, then drain. Add it to the sauce and mix. Add a little more water if needed so it sits just slightly above the rice.
- Cover tightly and cook on low heat until the rice is soft.
- Mix in the shredded cabbage, sliced onion and fresh tomatoes, letting the rice heat soften them slightly while keeping some crunch.
- Make the suya: slice the beef into very thin strips, cutting against the grain. Toss with a little oil, salt, beef bouillon and suya spice until coated.
- Thread the beef onto skewers and sprinkle more suya spice on both sides. Soak wooden skewers in water at least 30 minutes first if grilling outdoors.
- Heat the grill to about 200°C (400°F). Grill the skewers about 15 minutes, turning as needed, until browned and cooked through. Thin pieces may cook faster, so check early.
- Serve the suya with the jollof rice and the fried beef, if using. Add more suya spice on top if you like.
