- Rice wine vinegar2–3 tbsp
- Ketchup1 ½ tbsp
- Soy sauce2 tsp
- Garlic powder½ tsp
- Oil1 tsp
- Garlic3 cloves
- Bell pepper1
- Broccoli1 cup
- Chickpea15 oz
- Salt1
- Cornstarch2 tsp
- Sesame seed
Instructions
- Mix the sauce ingredients in a bowl and set aside, or add them straight to the pan at the chickpea step.
- Heat the oil in a large skillet over medium-high heat. Add the garlic and cook about 2 minutes, until translucent.
- Add the bell peppers, stir, cover and cook 2 minutes.
- Add the broccoli, stir, cover and cook 1 minute. To avoid overcooking, you can set the broccoli aside and add it back at the end.
- Add the chickpeas, the sauce, a generous pinch of salt, black pepper and cayenne. Lower the heat to medium, cover and cook 4 minutes.
- Taste the sauce and adjust with more vinegar, sugar or salt to your liking.
- Stir the cornstarch into room-temperature water, add it to the pan, mix well, cover and cook 2 minutes until the sauce thickens. Fold the broccoli back in if you set it aside.
- Garnish with sesame seeds, red pepper flakes and scallions, and serve with cooked rice or grains.
