Sweet and Sour Cod
Ingredients
- Cod1.4 lb
- Sugar5 tsp
- Garlic2 cloves
- Sage3 leaves
- White wine vinegar2 tsp
- White wine
- Flour
- Vegetable oil2.1 cups
Instructions
- Cut the desalted, skinned cod fillet into pieces, then remove any bones with tweezers.
- Dust all the pieces with flour, shaking off the excess.
- Heat plenty of peanut oil in a tall pot. When hot, fry a few pieces at a time for 4-6 minutes, depending on thickness, at 356-374°F, until golden brown.
- Drain the fried cod on paper towels.
- Peel and thinly slice the garlic cloves, then cut the sage leaves into strips.
- In a pot, pour in the white wine, then add the garlic slices, the vinegar, and finally the sugar and sage.
- Over low heat, warm the mixture until the sugar dissolves and it comes to a boil.
- Add the fried cod and cook for 5 more minutes, turning occasionally so it absorbs the flavour.
- Plate and serve hot.
