- Olive oil3 tbsp
- Garlic8
- Ginger · peeled1
- Tomato · chopped4
- Onion · chopped2
- Jalapeño chili2
- Cilantro1 bunch
- Cumin · ground1 tbsp
- Cinnamon · ground1 tbsp
- Allspice · ground1 ½ tsp
- Orange juice½ cups
- Brown sugar½ cups
- Soy sauce3 tbsp
Instructions
- Preheat the oven to 330°F (165°C).
- Pat the lamb leg dry and season it generously with ½ teaspoon of the salt and black pepper.
- Heat the olive oil in a large oven-safe pan over medium-high heat. Sear the lamb on all sides until deep golden, about 10 minutes, turning every few minutes. Set it aside on a plate.
- In a food processor, combine the garlic, ginger, tomatoes, onion, jalapeños and cilantro stalks. Pulse a few times until chopped but not smooth.
- Put the mixture in the same pan and cook over medium heat, stirring now and then, for about 10 minutes, until fragrant and slightly golden. Stir in the cumin, cinnamon and allspice and cook for 30 more seconds.
- Return the lamb to the pan. Add the water, orange juice, brown sugar, the remaining 1½ teaspoons of salt and black pepper to taste. Bring to a boil over medium-high heat.
- Cover tightly and transfer to the oven. Cook for 3 hours, basting occasionally with the pan juices.
- Uncover, baste the lamb again and return it to the oven for another 30 minutes.
- Let the lamb rest for a few minutes, then slice or shred it and serve with the thickened sauce spooned over.
