Ingredients

Instructions

  1. Soak 1 cup of lima beans in cold water overnight, about 10 to 12 hours.
  2. Slip the beans out of their skins with your fingers.
  3. Boil the beans in water over medium-high heat for 10 minutes.
  4. Lower the heat and simmer for 35 to 50 minutes, until very soft and spongy.
  5. Mash the beans with a wooden spoon until they look like mashed potatoes. For large batches, a food processor is faster.
  6. Stir in ½ cup sugar, ¼ tsp salt and 1 tsp vanilla extract for 1 to 2 minutes, until the filling becomes stickier. Keep stirring so it does not burn.
  7. Turn off the heat and let the filling cool.
  8. In a bowl, mix ¾ cup flour, 1 egg, ¼ tsp salt, ¼ cup sweetened condensed milk and 1 tsp vanilla extract until smooth.
  9. Divide the dough and the filling into 8 equal balls on a floured board.
  10. Flatten each dough ball with your palm, put a filling ball in the centre, and wrap the dough around it.
  11. Seal the edges and shape into an egg or chestnut shape.
  12. For egg shapes, dip the side in water then in sesame seeds. For chestnut shapes, dip only the top in water then in seeds.
  13. Brush the seeds with egg yolk.
  14. Place the manju on a lined baking tray, sealed side down, and bake at 350°F on the middle rack for about 20 minutes.
  15. For a deeper colour, bake chestnut shapes a little longer.
