Ingredients

Instructions

  1. Blend the roasted sesame seeds and sugar until fine. If the sesame seeds are raw, bake them at 350°F for 12 minutes first.
  2. Mix the sesame sugar powder with the melted butter and honey. Freeze for 30 minutes until semi-frozen.
  3. Wet a small round measure (3/4 tsp or 1/2 tsp) and scoop the filling, forming balls of about 8 grams each. Roll each ball smooth between your hands.
  4. Freeze the filling balls for 1 hour, until rock hard.
  5. Bring 160 grams of boiling water and pour it into 300 grams of glutinous rice flour, stirring well. Gradually add 75 grams of room-temperature water until a rough dough forms.
  6. Knead the dough for a few minutes until smooth and stretchy, dusting with glutinous rice flour if sticky.
  7. Roll the dough into a long even log and cut it into 30 to 35 equal pieces. Cover them with plastic wrap.
  8. Shape each piece into a small bowl, place a filling ball inside, pinch the wrapper closed and roll it smooth. If the filling softens, freeze the balls for 10 to 15 minutes.
  9. Bring 6 to 7 cups of water to a boil, add the dumplings and stir gently until they float to the top.
  10. Stir 1/2 cup glutinous rice flour with 1/2 cup water and pour into the pot to thicken the soup. Sweeten with rose jam and sweet rice wine, or another sweetener such as honey.
