Sweet & Salty Cookies
Ingredients
- Butter½ cups
- Sugar½ cups
- Brown sugar¾ cups
- Egg1
- Vanilla1 tsp
- Flour1 ¼ cups
- Baking soda½ tsp
- Potato1 cup
- Chocolate chip⅔ cups
Instructions
- Brown the butter in a small pot over medium heat, whisking constantly, until it turns golden and the milk solids are brown and settle at the bottom. Watch it closely so it doesn't burn.
- In a large bowl, whisk the white sugar, brown sugar and browned butter until combined. Add the egg and vanilla and whisk until fully incorporated.
- Add the cake flour and bicarbonate of soda and mix with a spatula until a smooth dough forms.
- Gently crush 1 cup of salted potato chips into small pieces by hand and fold them into the dough with 2/3 cup chocolate chips.
- Divide the dough into 14 balls and place them on a tray. Press extra chips and chocolate chips into the tops, then refrigerate for at least 30 minutes.
- Preheat the oven to 175°C on fan-assist and line a baking tray with baking paper.
- Space the dough balls well apart on the tray and bake in batches for 12-14 minutes, until golden brown.
- Cool completely on a wire rack, or serve slightly warm if preferred.
