Ingredients
- Pineapple1
- Garlic · chopped15
- Vegetable oil1 tbsp
- Scallion · chopped3
- Rice · cooked2 cups
- Saltto taste
- Black pepper½ tsp
- Soy sauce2 tsp
- Dark soy sauce1 tsp
- Chili pepper · for garnish
Instructions
- Cut the pineapple in half lengthwise through the crown. On the inside of one half, score a 1-inch border around the edge, then score the flesh inside it in a grid without piercing the skin. Scoop out the flesh, leaving a 1-inch border to form a bowl. Repeat with the other half. Keep the chunks and the bowls.
- Heat the oil in a wok or large skillet over medium heat. Add the chopped garlic and cook 1–2 minutes until light golden. Remove the garlic and leave the oil in the pan.
- Add 2 chopped scallions and sauté 15–30 seconds until fragrant.
- Turn the heat to high, add the cold rice, and stir to separate the grains. Cook 3–4 minutes until fairly dry.
- Season with salt, pepper if using, and both soy sauces, and mix well. Add the fried garlic and pineapple chunks and mix. Divide between the two pineapple bowls.
- Garnish with the remaining chopped scallion and red Thai chilies.
