Ingredients

Instructions

  1. Put the water, olive oil, sugar, lemon zest and a pinch of sea salt in a large saucepan over medium heat, stirring gently until the sugar dissolves.
  2. When it comes to a light boil, add the flour and stir constantly until it forms a dough.
  3. Fold the dough in the pan for about 1 minute until well bound, then take it off the heat and move it to a large bowl.
  4. Whisk the eggs in separate bowls.
  5. When the dough is cool enough to handle (about 5 to 10 minutes), mix in one whisked egg until fully incorporated, then mix in the second egg until the dough is sticky.
  6. Heat 3 cups sunflower oil in a large saucepan over medium heat for about 10 minutes until hot.
  7. Shape spoonfuls of batter into balls slightly smaller than a golf ball and drop them into the oil, spaced apart, frying in batches for about 10 minutes until golden all over, turning them every 2 minutes if they do not turn themselves.
  8. Drain each batch on paper towels.
  9. Roll each fritter in the granulated sugar and serve warm or at room temperature.
