Ingredients
- Soy sauce3 tbsp
- Ginger2 tbsp
- Sriracha sauce3 tbsp
- Sesame oil2 tsp
- Chili flake · flakes1 tbsp
- Coconut sugar4 tbsp
- Orange
- Arrowroot1 ½ tbsp
- Snap pea12 oz
- Olive oil
- Radicchio · chopped2
- Lemon
- Beef1 ½ lb
- Rice · cooked2 cups
- Sesame seed
- Scallion · chopped
Instructions
- Mix the sauce ingredients except the arrowroot. Taste and adjust with sriracha, soy sauce and orange juice. Set the sauce aside with the arrowroot.
- Heat a large nonstick skillet on high. Add the sugar snap peas and stir constantly until the outside is charred, about 3 minutes. Remove the peas from the skillet.
- Return the skillet to the heat and lightly spray with olive oil. Add the chopped radicchio, squeeze in a little lemon juice, and stir until wilted. Remove from the skillet.
- Return the skillet to the heat and add the chopped beef. Sear until it reaches your desired doneness, about 4 to 8 minutes. Lower the heat and make a well in the center of the pan.
- Add the arrowroot to the sauce and mix well, then pour it into the well. As soon as the sauce bubbles and thickens, take the skillet off the heat and fold the beef through the sauce continuously.
- Transfer the beef out of the skillet and garnish with sesame seeds and chopped green onion.
- Divide the beef evenly among 4 containers (or your number of servings). Add brown rice (or cauliflower rice), radicchio and sugar snap peas.
