Swiss Meringue Buttercream Recipe
Ingredients
- Egg5
- Butter2 cups
- Sugar1 ½ cups
- Salt1 pinch
- Vanilla1 tsp
Instructions
- Put the egg whites, sugar and salt in a bowl and whisk briefly.
- Set the bowl over a pan of simmering water, making sure the water does not touch the bowl. Whisk occasionally as it warms, then whisk constantly once warm. Heat until it reaches 160°F or until it feels smooth, not grainy, between your fingers.
- Move the bowl to a stand mixer and whisk until glossy peaks form and the meringue is at room temperature.
- Switch to the paddle attachment. With the mixer on low, add room-temperature butter one tablespoon at a time, letting each piece incorporate before adding the next.
- Once all the butter is incorporated, add the vanilla extract. Transfer to a piping bag or a zip-top bag to store in the refrigerator or freezer.
