Swordfish with Tomato Sauce

Ingredients

Instructions

  1. Finely grate 3 to 4 tomatoes until you have 1 cup (225 grams) of tomato sauce. Peel 2 garlic cloves.
  2. Heat a small frying pan over medium heat. Add 2 tbsp of the olive oil and the garlic cloves, stirring constantly. After 3 minutes, when the garlic is lightly sautéed, remove it and discard.
  3. Add 1/2 tsp of smoked sweet Spanish paprika to the hot oil and stir quickly. Add the 1 cup of tomato sauce, season with sea salt and black pepper, stir, and reduce to low heat.
  4. Meanwhile, heat a nonstick grill pan (or regular nonstick frying pan) over medium-high heat.
  5. Pat the swordfish steaks dry with paper towel. Brush both sides of each steak with olive oil and season both sides with sea salt and black pepper.
  6. Place the swordfish steaks in the hot pan and cook 90 to 120 seconds per side. Transfer to serving dishes.
  7. When the tomato sauce has thickened, stir it and remove from the heat.
  8. Spoon the tomato sauce over the swordfish, sprinkle with finely chopped fresh parsley, and serve immediately.
