Tai-Meshi (Sea Bream Rice)
Ingredients
- Rice3 cups
- Sea bream
- Salt1 tbsp
- Cm/4inch-square Konbu10
- Sake2 tbsp
- Soy sauce1 tbsp
- Mitsuba if you like
Instructions
- Wash the rice and leave it for about 30 minutes. If you use pre-washed rice, you can skip washing.
- Coat the sea bream with salt and bake at 220 C (428 F), or grill it in a fish roaster, for about 15-20 minutes.
- Put the rice in a pot and add water up to the level marked in the pot. Add the sake and light soy sauce, then mix well.
- Wipe the konbu with a damp cloth and place it on top of the rice. Put the sea bream on the konbu so the bones do not fall into the rice.
- Put the pot in the rice cooker, close the lid and press the start button.
- When cooked, remove the fish and konbu. Take out the bones, return the flesh to the rice and mix.
- Serve in a dish and garnish with chopped mitsuba if you like.
