Tamagoyaki with Green Onions
Ingredients
- Egg4
- Scallion3
- Salt¼ tsp
- Soy sauce¼ tsp
- Mirin1 tbsp
- Oil1 tsp
Instructions
- Mix the eggs, salt, soy sauce and mirin (or sugar) in a bowl, then stir in the green onions.
- Heat a tamagoyaki pan or 8–9 inch round non-stick pan over medium-high heat and add the oil.
- Pour in a thin layer of egg, tilting the pan to coat the bottom. When the egg is partly set but still runny on top, gently roll it into a log.
- Push the log to one end of the pan, pour more egg into the empty side, and once set, roll the log back over the new layer. Continue until all the egg is used.
- Remove the rolled omelette from the pan and let it cool for 3–4 minutes.
- Trim the ends and slice the log into 1/2-inch pieces.
