Tastes Incredible — But It's Just ONIONS, PASTA and CHEESE?!

Ingredients

Instructions

  1. Melt the butter in a large, high-sided ovenproof skillet. Add the onions, season with salt and pepper, and add a splash of white wine.
  2. Cover and cook for a few minutes, then uncover and keep cooking until the onions are deep mahogany and jammy.
  3. Add the garlic (if using), thyme and wine to the pan. Cook, stirring now and then, until the liquid has reduced by half.
  4. Add the stock and pasta and simmer, stirring often so the pasta does not stick, until almost all the liquid is absorbed and a thick sauce forms.
  5. Remove from the heat and stir in the pecorino, mustard and Worcestershire sauce.
  6. Scatter the Gruyère, mozzarella and panko over the top and broil until melted and golden brown in spots.
