Teba Shio (Salted Chicken Wings)
Ingredients
- Chicken wing2 lb
- Sake1 ½ cups
- Salt
- Black pepper · ground
- Shichimi togarashi
- Lemon
Instructions
- In a large bowl, toss the chicken wings with the sake so they are fully covered. Let them sit for 15 minutes, turning them upside down halfway through.
- Set a wire rack on a baking pan. Pat the wings dry with paper towels and lay them skin side up on the rack, spaced about 1/4 to 1/2 inch apart so air can circulate.
- Season the wings generously with sea salt and black pepper, flip them, and season the other side.
- Broil for 10 minutes, then flip the wings skin side up and broil another 10 minutes, or until fully cooked, golden and crispy.
- Serve warm with shichimi togarashi and lemon wedges if you like.
