Ingredients

Instructions

  1. Grate the ginger, squeeze out about 1/4 teaspoon of juice, and stir it into the 2 tablespoons sake. Set aside.
  2. Pat the salmon fillets dry with paper towels.
  3. Put the potato starch in a tea strainer and dust all sides of the salmon with a thin, even coat.
  4. Heat a frying pan over medium heat until hot but not scorching. Add the vegetable oil, then the salmon. Fry without moving it until the side is cooked about 1/3 of the way up.
  5. Flip the salmon and fry the other side until it is cooked about 1/3 of the way through.
  6. Take the salmon out of the pan. Wipe out all the oil with a paper towel held in tongs.
  7. Add the ginger sake, 2 tablespoons soy sauce and 2 tablespoons evaporated cane sugar to the pan. Stir until the sugar dissolves and the mixture boils.
  8. Return the salmon to the pan and keep turning it until it is coated in a thick, shiny glaze.
