Thai Basil Pork Recipe
Ingredients
- Ground pork · minced8 oz
- Garlic4 cloves
- Chili pepper5
- Basil2 cups
- Fish sauce2 tbsp
- Soy sauce1 tbsp
- Sugar2 tsp
- Vegetable oil
- Egg1
- Lime
Instructions
- Roughly chop the garlic and chilies and set aside. Pick the basil leaves off the stems.
- Whisk the sauce ingredients in a small bowl until the sugar dissolves.
- Heat a wok on high, add 2 Tbs oil, then the garlic and chilies. Stir-fry for about 1 minute until fragrant, without burning the garlic.
- Add the pork and stir-fry for 1 to 2 minutes, until about three-quarters cooked.
- Pour in the sauce and stir-fry for 30 seconds to 1 minute, until the pork has absorbed it.
- Stir in the basil and take off the heat.
- Fry an egg in enough oil to nearly deep-fry it, spooning oil over the top so it cooks without flipping.
- Place the basil on a serving plate, top with the fried egg, and serve with lime wedges and jasmine rice.
