Thai Basil Zhua Bing (Hand grasp 'pancake')
Ingredients
- All-purpose240 g + 4 tbsp
- Salt1 tsp
- Baking powder1 tsp
- Oil for cooking and greasing
- Thai basil2 cups
- 5-spice powder1 tsp
- Sugar1 tsp
- Oil¼ cups
Instructions
- Mix the flour, salt and baking powder (if using) in a stand mixer bowl, then knead with a dough hook at medium-low speed.
- While mixing, pour in the water and knead until a dough forms, adding water one tablespoon at a time if dry spots remain after 2 to 3 minutes.
- Knead the dough smooth on a floured surface, divide into 4 pieces, knead each to remove air bubbles and shape into balls.
- Add 1½ tablespoons of oil to an 8-inch non-stick cake pan, place the dough balls in it and coat all sides with oil. Cover and rest at least 30 minutes, or overnight in the fridge.
- For the basil mixture, put the Thai basil, flour, 5-spice powder, salt and sugar in a bowl.
- Heat ¼ cup of oil in a small saucepan until it reaches 350°F, remove from heat and carefully pour it over the basil mixture.
- Stir quickly until combined. The basil will release moisture and turn slightly dark and wet within a few minutes.
- Oil your hands and work surface. Flatten one dough ball, then roll or stretch it into a thin rectangle about 12 by 7 inches, and spread a generous layer of basil mixture over it, pressing lightly.
- Fold the dough in layers using the fan method, stopping with 1 inch left. Fold the top layer down like sealing an envelope and press gently. Optionally, lift and slap to thin it further.
- Roll the dough into a coil and tuck one end underneath. Rest at least 15 minutes, then repeat with the other dough pieces.
- Heat a thin layer of oil in a cast-iron or non-stick pan. Flatten a coil into a disc about 5 to 6 inches across and 1 cm thick, then place in the pan and spread slightly with your fingers.
- Cover and pan-fry over medium-low heat for 2 to 3 minutes until golden, checking and adjusting heat as needed.
- Brush the top with oil, flip, cover and cook another 2 to 3 minutes until golden.
- Transfer to a board and, while warm, clap the bing between your palms to fluff it up, taking care as it is very hot.
