Thai Street-food Chicken (Gai Yang)
Ingredients
- Chicken thigh2 lb
- Lemongrass1
- Garlic4 cloves
- Fish sauce2 ½ tbsp
- Soy sauce1 tbsp
- Dark soy sauce2 tsp
- Brown sugar3 tbsp
- Oil2 tbsp
- Nam Jim Jaew
- Sweet chilli sauce
- Lime
- Chili pepper
- Cilantro
- Coconut
Instructions
- Blend the marinade ingredients except the oil until the lemongrass and garlic are a smooth puree. If you have no stick blender, finely grate the lemongrass and garlic and mix well.
- Pour the marinade into a bowl, add the oil and stir. Add the chicken and toss to coat thoroughly. Cover and marinate overnight, or for at least 3 hours.
- Heat a barbecue on high or a nonstick pan over high heat.
- Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill or in the pan, then reduce the heat to medium. Cook until golden brown, about 5-6 minutes per side, turning immediately if it starts to burn.
- Rest the chicken for 3 minutes, then serve with coconut rice, lime wedges, chilli and coriander, and your chosen sauce.
