Instructions

  1. Make garlic oil: heat the oil in a small pot over medium-low heat. Add one garlic piece as a tester and, once it bubbles, add the rest. Fry, stirring often, until golden but not brown. Strain, keeping the oil and garlic separate.
  2. Cook the pork: add 1 to 2 tablespoons water to a small or medium pot over medium-high heat. Once bubbling, add the ground pork and break it up while stirring until fully cooked. Transfer to a bowl and keep covered and warm.
  3. Make the sauce: combine all the sauce ingredients in a small bowl. Add about 1 tablespoon of the liquid from the pork and stir until the sugar dissolves.
  4. Bring a large pot of water (at least 6 quarts) to a boil. Cut the noodles with scissors to a shorter length and loosen any strands stuck together.
  5. Gently warm the sauce in the microwave or a pot until warm, without reducing it. Keep covered.
  6. Reheat the pork if it has cooled.
  7. Once the water boils, add the meatballs and boil for about 1 to 2 minutes until hot. Remove and set aside.
  8. Return the water to a boil, add the bean sprouts and blanch for 3 seconds. Scoop them into a large mixing bowl.
  9. Once the water boils again, cook the noodles for 2 to 3 minutes for wonton noodles, or as long as your noodles need. Drain with a wire skimmer, shake off excess water and add to the bean sprouts.
  10. Pour the garlic oil over the noodles and toss to separate them and mix with the sprouts. Add the pork, leaving behind any liquid, then add the peanuts, chilli flakes, sauce and green onion and toss well.
  11. Divide into bowls and top with the meatballs, cilantro, fried garlic and a lime wedge. Squeeze the lime over the noodles before eating.
