Preparación
- Preheat the oven to 350°F (175°C). Line a rimmed baking sheet with foil, then parchment paper.
- In a large bowl, soak the panko in the milk for at least 10 minutes, until fully moistened.
- Heat the olive oil in a medium skillet over medium heat until shimmering. Cook the onion until softened, about 5 minutes.
- Add the garlic and cook about 30 seconds until fragrant.
- Add the tomato paste and sugar and cook until the paste darkens in colour.
- Stir in the Worcestershire sauce and cider vinegar, then take off the heat.
- Add the onion mixture to the soaked panko and stir briefly.
- Add the eggs, spices, salt and about 2 tablespoons of the beef and whisk until well combined.
- Add the remaining beef and gently work it in by hand without overmixing.
- Shape into a loaf about 8 by 5 inches on the prepared sheet. Whisk the glaze ingredients until smooth, spread half over the loaf and keep the rest aside.
- Bake on the centre rack for 45 minutes. Spoon the remaining glaze over the top and bake a further 20 to 25 minutes, until the centre reaches 160°F (72°C).
- Rest for 10 to 15 minutes before slicing.
