Instructions
- Warm the milk in the microwave for about 30 seconds, to around 38°C/100°F.
- Stir in the yeast until dissolved and let stand 5 to 10 minutes until light foam and small bubbles appear.
- In a large bowl, add the flour, sugar and salt. Add the proofed milk-yeast mixture and the melted butter.
- Mix with your hands until no dry flour remains and a shaggy, sticky dough forms.
- Cover and rest the dough for 20 minutes.
- Knead for 8 to 10 minutes until smooth and no longer sticky, then check that a small piece stretches thin without tearing (gluten window test).
- Grease the bowl, add the dough, cover and let rise until doubled, about 45 to 60 minutes.
- Punch down the dough and grease an 8½ by 4½ inch loaf pan.
- Flatten the dough into a large rectangle and roll it into an 8-inch log to fit the pan. Add any optional fillings or seeds before rolling.
- Place the log seam side down in the pan, cover loosely and let rise until domed about 1 inch above the rim, about 60 minutes.
- Preheat the oven to 375°F/190°C 20 minutes before the rise ends.
- Bake for 30 to 35 minutes until well browned. It should sound hollow when tapped, or reach 190°F/87°C inside.
- Remove from the pan onto a wire rack and cool at least 30 minutes before slicing.
