The Best Almond Cinnamon Rolls with Cream Cheese Icing!
Ingredients
- Milk1 cup
- Yeast1 tbsp
- Sugar2 cups
- Egg2
- Butter0.83 cups
- Salt1 ½ tsp
- Vanilla1 tsp
- Almond · roasted1 ½ cups
- Flour3 ½ cups
- Cinnamon · ground1 tsp
- Heavy cream1 cup
- Cream cheese8 oz
- Amaretto liqueur1 tbsp
Instructions
- Heat the milk until it reaches 120-130°F, pour it into a large bowl, then sprinkle over a few tablespoons of sugar and the yeast. Let it foam for 5 minutes, then whisk.
- Add the rest of the sugar, eggs, cooled melted butter, salt, vanilla and almond extracts, and whisk for a minute until the eggs are well beaten.
- Pulse the almonds in a food processor until very finely chopped but coarser than almond flour, then add them to the batter.
- Gradually whisk in the flour until no lumps remain, switching to a spatula once it thickens. Once a dough ball forms, turn it onto a floured surface.
- Knead for 4-6 minutes, adding flour as needed, until soft, elastic and still slightly sticky.
- Return the dough to the bowl, cover with a towel and proof in a warm place for about 1-1 ½ hours, until doubled.
- For the filling, pulse 1 cup dry roasted almonds in a food processor until finely diced, then add the sugar, cinnamon, salt and softened butter and pulse until spreadable but slightly coarse.
- Once proofed, punch down the dough and roll it on a floured surface into a 20x20-inch square. Spread the filling evenly over it with an offset spatula.
- For classic rolls, roll the square into a tight log and cut into 12 pieces with a serrated knife. For twisted rolls, cut the square into 12 strips, twist each from both ends, coil into a small bun and tuck the end under.
- Place the rolls in a parchment-lined casserole pan, spaced apart. Preheat the oven to 350°F and set the pan on the stovetop to proof for 30-45 minutes, until doubled.
- Bake at 350°F for 10 minutes. Pour the heavy cream evenly over the rolls, then bake a further 25-28 minutes until rich golden brown.
- Beat the softened cream cheese until smooth, then beat in the powdered sugar, salt and Amaretto or almond extract until smooth and creamy.
- While the rolls are still hot, spread the icing over the top. Garnish with sliced almonds if you like.
