Instructions

  1. Warm the milk to 120 to 130°F (49 to 54°C) in the microwave or on the stovetop. Pour it into a large bowl, add a few teaspoons of sugar and sprinkle the yeast over it.
  2. Let the yeast proof in the warm milk for 5 minutes, then add the salt, sugar, eggs, vanilla and melted butter. Whisk until smooth, then gradually mix in the flour, about 1/2 cup at a time.
  3. Once a dough ball forms, turn it onto a floured surface and keep adding flour and kneading until the dough is very soft but not sticky.
  4. Knead for 4 to 5 minutes, then return the dough to the bowl, cover with a towel and leave in a warm spot until doubled in size, about 45 minutes to an hour.
  5. While the dough proofs, put the diced apples, spices, salt, vanilla and sugar in a large pot and stir until the apples are well coated.
  6. Cover and cook over medium heat, stirring every few minutes, until the apples are soft, about 15 to 18 minutes.
  7. Mix the cornstarch and water into a slurry, stir it into the filling and cook for another minute until thickened. Remove from the heat and let cool to room temperature.
  8. Once the dough has risen, roll it out on a floured surface into a rectangle about 20 by 20 inches. Spread the 1/2 cup softened butter over it.
  9. Spread the cooled filling to the edges, roll into a log and press the edges in to shape it neatly.
  10. Cut the log into 12 equal pieces with a sharp serrated knife and arrange them cut side up in a 9x13-inch baking dish.
  11. Cover and let the rolls proof for 30 to 45 minutes until doubled. Meanwhile, preheat the oven to 350°F (175°C).
  12. For the icing, beat the softened cream cheese in a bowl for a minute until smooth. Add the vanilla, salt, sugar and a few tablespoons of cream and beat until thick, then thin with more heavy cream as needed.
  13. Bake the rolls for 10 minutes, then remove and pour the 3/4 cup cream over them, a little on each roll.
  14. Return to the oven and bake 25 to 28 more minutes, until the tops are golden brown.
  15. Spread the icing over the warm rolls and serve warm.
