Ingredients

Instructions

  1. Heat the milk to 120°F (microwave or stovetop). Pour into a large bowl, sprinkle the yeast on top and let stand about 5 minutes until foamy.
  2. Add the sugar, salt, vanilla, eggs and cooled melted butter. Whisk for a few minutes until the eggs are well beaten.
  3. Gradually mix in the flour, whisking first, then switching to a spatula as the batter thickens and forms a dough ball.
  4. Knead on a floured surface, adding flour as needed (more than 4 cups is fine), until smooth and elastic. The dough should be very soft and just slightly sticky.
  5. Return the dough to the bowl, cover with a towel and leave in a warm place until doubled, about 1 to 1½ hours.
  6. Line a large casserole dish (about 9x13 inches) with parchment or spray with non-stick spray.
  7. Roll the dough into a 15x20-inch rectangle. Spread the ½ cup softened butter evenly to the edges, then sprinkle with the brown sugar and cinnamon mixed together, followed by the diced pecans.
  8. Roll tightly from the long side into a log, pressing the edges in slightly for an even shape. Slice into 12 equal rolls with a very sharp, thin knife and place them in the dish, spaced apart.
  9. Cover loosely and proof in a warm place for 45 minutes to 1 hour, until fluffy. Meanwhile, make the caramel sauce and preheat the oven to 350°F.
  10. Bake the rolls 10 minutes, then pour ¾ cup cream (or half-and-half) evenly over them.
  11. Return to the oven and bake a further 23 to 26 minutes, until the tops are a rich golden brown.
  12. As soon as they come out, spread the caramel sauce evenly over the rolls, keeping about ¼ cup aside, then sprinkle the remaining ½ cup pecans on top. Divide and serve, adding extra sauce and pecans if you like.
  13. Caramel: place 1 cup sugar in a medium saucepan and add ¼ cup water. Do not stir. Simmer over medium-high heat without stirring until golden brown; if it crystallises instead, raise the heat.
  14. Stir in ¼ cup butter until melted, then stir in ½ cup heavy cream. Off the heat, stir in 1 tsp sea salt flakes and 1 tsp vanilla, then cover and let cool.
