Ingredients

Instructions

  1. Preheat the oven to 350°F (180°C). Grease two 9-inch (23 cm) round cake pans and line the bottoms with parchment paper.
  2. In a large bowl, stir together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
  3. In another bowl, whisk the oil, granulated sugar, brown sugar, eggs and vanilla for 2–3 minutes until well combined and slightly lighter.
  4. Add the dry ingredients in 3 additions, stirring gently after each just until the flour disappears. Fold in the grated carrots and nuts until evenly distributed.
  5. Divide the batter evenly between the pans. Bake 30–35 minutes, until a toothpick comes out clean or with a few moist crumbs.
  6. For the frosting, beat the softened butter and sifted powdered sugar until smooth. Add the cream cheese and mix briefly until just smooth. Add the vanilla and cold heavy cream, then whip 1–2 minutes until fluffy and spreadable.
  7. Level the cake tops if needed. Place one layer on a serving plate and spread a generous layer of frosting on top. Place the second layer upside down (flat side up), then frost the top and sides and decorate with pecans.
  8. Refrigerate for 3–4 hours (overnight is best) before slicing.
