- Garlic2 cloves
- Coriander seed · ground½ tsp
- Cumin · ground½ tsp
- Sugar½ tbsp

- Tomato sauce1 cup

Instructions
- Preheat a large pot over medium-high heat with the oil. When hot, add the beef, season with salt, raise the heat to high and brown all over for 7 to 8 minutes. Set the beef aside.
- In the same pot, melt the butter. Add the onion, carrots and celery and stir. Lower the heat to medium and cook 4 to 5 minutes, until the onion is translucent.
- Add the garlic, then season with more salt and black pepper, the cumin, coriander and sugar. Add the beets, beef broth, water and tomato sauce, adding more water if you want a thinner soup. Return the browned beef to the pot.
- Cover and bring to a simmer. Reduce the heat to low and cook, covered, for 45 minutes to 1 hour, until the beef is tender.
- Add the potatoes and cook for 15 minutes. Add the beet greens or cabbage, the lemon juice (optional, for a more sour soup), dill and parsley, and cook a couple more minutes.
- Take the pot off the heat, cover and let stand for 15 minutes before serving.
