Ingredients

Instructions

  1. Core and dice the tomatoes, drain off excess juice and transfer them to a medium bowl.
  2. Roll the basil leaves into a tube and thinly slice into ribbons, then add to the tomatoes.
  3. Finely mince 5 garlic cloves. Mix 1 teaspoon of the minced garlic into 3 tablespoons olive oil and set aside. Add the rest of the garlic to the tomatoes.
  4. Season the tomatoes with 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Stir gently and let marinate for 30 minutes.
  5. Preheat the oven to 400ยฐF with a rack in the centre. Cut the baguette into 1/2-inch diagonal slices and place them on a parchment-lined baking sheet.
  6. Brush both sides of the slices with the garlic oil, sprinkle with parmesan, and bake at 400ยฐF for 5 minutes. Then broil on high for 1 to 2 minutes, until the edges are golden brown.
  7. Arrange the toasts on a platter and spoon the tomato mixture over them. Serve with a drizzle of olive oil and balsamic glaze if desired.
