Ingredients

Instructions

  1. Make the dressing first: finely dice the celery and green onions into a large bowl, then add the chopped herbs and grated or pressed garlic.
  2. Zest the lemon and squeeze in a couple tablespoons of juice. Add the mayonnaise, Dijon mustard, red wine vinegar, capers, salt, pepper, onion powder and paprika.
  3. Whisk until smooth and creamy, then keep chilled until needed.
  4. Bring a large pot of salted water to a boil. Meanwhile, peel and clean the shrimp.
  5. Cook the shrimp in the boiling water for 2 to 3 minutes, until no longer translucent.
  6. Lift out the shrimp with a skimmer and transfer to a bowl of ice to stop the cooking.
  7. Chop the cooled shrimp into small bite-sized pieces and toss them in the dressing to coat.
  8. Preheat a large frying pan over medium heat and melt the butter. Working 3 to 4 buns at a time, coat them lightly in butter and toast until warm.
  9. Fill each warm bun generously with the shrimp filling and garnish with extra herbs if you like.
