Instructions
- Mix the pork (or chosen substitute) with 1 tablespoon of chopped garlic, the ginger, soy sauce, Shaoxing wine, and black pepper, leaving out the cooking oil and mustard greens. Marinate for about 10 minutes.
- Combine the noodle sauce ingredients in a bowl and set aside. The sauce keeps up to 5 days in the fridge.
- Heat a wok over high heat, add 1 tablespoon of oil and swirl to coat. Stir-fry the pork mixture for 3 to 4 minutes until fully cooked, the moisture has gone, and the edges are slightly browned. Add the preserved mustard greens and stir-fry 1 to 2 minutes. Take off the heat and keep warm.
- Cook the noodles according to the package. In the last minute, add the greens to the boiling water, cook together for 1 minute, then drain.
- Spoon about half the sauce (roughly 3 tablespoons) into the bottom of a serving bowl. Lay the noodles on the sauce, arrange the greens on top, then add the pork. Pour the hot broth around the edge of the bowl. Garnish with green onion and crushed peanuts or sesame seeds, then mix thoroughly before eating.
