Ingredients

Instructions

  1. Check the salmon for bones with fish tweezers and scrape off any scales with a knife.
  2. In a large bowl or flat tray, mix the miso, sake, mirin, soy sauce and sesame oil.
  3. Cut the salmon into individual portions of about 170 g (6 oz) each if it is not already in fillets, then place them skin side up in the marinade.
  4. Spoon the marinade over the salmon, cover and refrigerate for 1 to 2 hours for fillets up to 2.5 cm (1 inch) thick, or up to 3 hours for thicker cuts.
  5. Preheat the broiler to High (290°C / 550°F) with the rack about 23 cm (9 inches) from the heating element. Preheat for 5 minutes.
  6. Thinly slice the green onion diagonally. Line a baking sheet with foil and oil it lightly.
  7. Scrape off all excess marinade from the salmon, then place it skin side down on the sheet.
  8. Broil for about 10 to 13 minutes, without flipping, until the thickest part reaches 52 to 54°C (125 to 130°F). Remove at 49°C (120°F) for medium-rare.
  9. Top with the toasted sesame seeds and green onion before serving.
