Ingredients

Instructions

  1. Preheat the oven to 350°F (180°C). Lightly grease a 25cm non-stick loose-bottomed tart tin with vegetable oil.
  2. Halve the pumpkin, scoop out the seeds, and cut into large wedges (no need to peel). Spread on a baking tray, cover with foil and roast for about 1 hour until tender, removing the foil for the last 10 minutes.
  3. Make the pastry: sieve the gluten-free flour and xanthan gum into a large bowl, then stir in the sugar and cinnamon. Rub in the cold cubed butter until it looks like fine breadcrumbs.
  4. Beat the egg in a separate bowl and add it to the mix. Bring together into a rough dough, adding a splash of milk only if needed, without overworking it.
  5. Pat the dough into a flat round about 2.5cm thick, wrap in clingfilm and chill for at least 30 minutes.
  6. Let the cooked pumpkin cool. Roll the pastry to about the thickness of a pound coin (between two sheets of clingfilm if it crumbles) and press it into the tart tin. Trim the overhang, prick the base with a fork and chill for 10 minutes.
  7. Line the chilled case with clingfilm, fill with baking beans or rice and blind bake for 10-12 minutes. Remove the clingfilm and beans, then bake a further 5 minutes until golden. Cool completely.
  8. Scoop the cooled pumpkin flesh into a food processor, discard the skin and blitz until smooth.
  9. Melt the butter in a small pan over low heat for 1-2 minutes until dark and frothy. Add it to the pumpkin with the sugar, gluten-free flour, nutmeg, ½ teaspoon cinnamon and vanilla.
  10. Whisk 2 eggs in a separate bowl, add to the processor and blitz until well combined. Spread the filling evenly in the cooled pastry case.
  11. Roll out the leftover pastry to about pound-coin thickness, cut into strips about 1cm wide and lay them over the pie in a lattice, trimming rough edges.
  12. Beat the remaining egg and brush over the pastry. Bake for 45-50 minutes until golden. Dust with icing sugar and cinnamon before serving.
