The BEST Green Beans of Your Life | Andalusian Garlic Green Beans
Ingredients
- Green bean1 lb
- Extra virgin olive oil3 tbsp
- Baguette2 slices
- Garlic6 cloves
- Bell pepper · roasted2
- Cumin · ground½ tsp
- White wine vinegar1 tbsp
- Salt
- Black pepper
- Parsley · chopped
Instructions
- Fill a stockpot halfway with water, salt it generously and bring to a high heat.
- Trim the ends off the green beans and rinse them in a colander.
- When the water boils, add the green beans. When it returns to a boil, cook for 1 to 2 minutes until just al dente. Save some of the cooking water, then move the beans to a bowl of iced water. Once cool enough to handle, lay them on a dishcloth and pat dry.
- Heat a large fry pan over medium heat with the olive oil. After a couple of minutes, add the baguette slices and garlic cloves and fry for 3 to 4 minutes until lightly golden all over. Remove from the pan and turn off the heat.
- In a tall container, combine the fried bread and garlic, the roasted red peppers, cumin, white wine vinegar and 120 ml (1/2 cup) of the reserved cooking water. Blend with a hand blender until smooth.
- Reheat the same pan with the olive oil over medium heat. After a couple of minutes, add the green beans and stir constantly for 1 to 2 minutes.
- Add the puree, season with salt and pepper, mix well and simmer for 2 to 3 minutes.
- Transfer to a serving dish and sprinkle with chopped parsley.
